INGREDIENTS

1 sliced apple
½ chopped onion
1 sliced cucumber
2 hand fulls of power greens
salt, pepper, cayenne, oil and vinegar
½ cup quinoa

PREPARATION

1. Slice and chop all ingredients.
2. Place sliced cucumber in a bowl and add1/4 cup white wine vinegar, 2 Tablespoons extra-virgin olive oil, 1/4 teaspoon salt, and black pepper.
3. Rinse 1 cup of organic quinoa in cold water.  Pour rinsed quinoa into your rice cooker. Add two cups of water and add black pepper, cayenne pepper, garlic and onion. Turn on your rice cooker. When the rice cooker beeps, you will have perfectly cooked quinoa (approximately fifteen minutes). Turn off the cooker and allow quinoa to set for three to five minutes and then fluff with a fork.

4. In a large bowl, add the quinoa, sweet peppers, apples, power greens, and toss well. Serve right away.
5. Enjoy!
